Take your taste buds on a trip to Greece with this tender pork gyros recipe.
INGREDIENTS
- 2.6kg pork leg roast, bone in
- 4 garlic cloves, peeled
- 4 oregano sprigs
- 1 cup (250ml) chicken stock
- 2 celery sticks, sliced
- 2 dried bay leaves
- 2 x 1kg packet frozen oven-baked chips
- 1 cup (280g) Greek-style yoghurt
- 1 garlic clove, crushed
- 1/4 teaspoon dried oregano
- 16 small pita pockets
- 1 small red onion, cut into thin wedges
- 2 x 200g grape tomatoes, quartered
- 100g baby spinach
- 1/2 cup (75g) pitted Kalamata olives, chopped
- Lemon wedges, to serve
- Extra virgin olive oil, to serve
METHOD
- Combine pork, peeled garlic, oregano sprigs, stock, celery, bay leaves and salt and pepper in large saucepan. Bring to the boil over high heat. Boil, covered, for 10 mins. Reduce heat to medium-low and cook, covered for 2 hours or until pork is tender. Remove from heat and set aside for 10 mins to rest. Remove pork from saucepan. Discard stock mixture. Remove and discard pork rind. Coarsely shred pork.
- Cook chips following packet instructions.
- Combine yoghurt, crushed garlic and dried oregano in a small bowl. Season with salt and pepper. Spread yoghurt mixture over one half of each pita bread. Top with onion, tomato, spinach, olives and pork. Drizzle with more yoghurt. Fold pita pocket over to enclose. Serve with chips, lemon wedges and a drizzle of oil.

Homemade Stove Top Pizza Calzone, fast easy and the perfect way to make pizza especially in the Summer, add your favorite toppings to make this your new amazingly delicious cheesy pizza.
Ingredients
- See Recipe for Best Pizza Dough here
- FOR THE TOPPING (for each Pizza or Calzone)
- 10 cherry tomatoes or 10 mini Roma (seeding and quartered, or half of a can of chopped tomatoes nothing added)
- pinch of salt
- 1/4 teaspoon oregano
- 3-4 leaves fresh basil chopped
- 1 tablespoon olive oil (15 grams)
- 1/2 cup grated firm mozzarella or more if desired (100 grams)
- 2-3 tablespoons chopped pancetta if desired (10 grams)
- cup *1/4 cooked mushroom slices 1/2 – 1 pepper chopped (25 grams)
- 2 tablespoon grated fresh parmesan (only to the Calzone) (16 grams)
- *I sautéed the mushrooms and chopped peppers with a little olive oil, oregano, salt parsley and a little water, cook on medium heat until water has evaporated and mushrooms and peppers are lightly browned.
Instructions
- In a small bowl toss together the chopped tomatoes, salt, oregano, chopped basil leaves and olive oil. Set aside.
- Lightly grease a 24 centimeter heavy-duty frying pan. (or 3 if you are doing them together, dough will keep overnight in the refrigerator)
- FOR THE PIZZA
- Line the bottom of the pan with 1/3 (or less) of the dough. Heat on low – medium heat covered for approximately 10 minutes until the bottom is lightly browned. Flip it over.
- On the browned side add the tomato mixture, pancetta, mushrooms and mozzarella.
- Cover and continue to cook on low to low/medium (more low then medium) heat for another 15 minutes. Uncover lower heat and continue for approximately 5 minutes. Check it after 10 minutes making sure it doesn’t burn.
- FOR THE CALZONE
- Line the bottom of the pan with dough, cover half the dough with the tomato mixture, pancetta, mushrooms, mozzarella and Parmesan, fold the other half over, pinch the sides closed so none of the filling escapes, cook covered on medium heat 15-20 minutes on each side. Serve immediately. Enjoy!
- **Check your heat, remember not too high or it will just burn and not cook completely.

Best Pizza Dough, an easy, homemade pizza dough recipe that will become your favorite go to for pizza night. Thick or thin crust you decide.
Ingredients
- 2 cups lukewarm water (470 grams)
- 1 pinch sugar
- 1 1/2 tablespoons active dry yeast
- 2 tablespoons olive oil
- 5 1/4 cups all purpose flour or bread flour (680 grams)
- 1 1/2 teaspoons salt
Instructions
- In the bowl of your stand up mixer (or a large bowl if you knead by hand) add warm water then add yeast and sugar, let sit for 5 minutes, then stir to combine. Continue with Machine or Hand.
MIXING BY MACHINE
- Add the olive oil, flour and salt, with the hook attachment start to combine on low speed, scrape the hook and then raise to medium speed and knead for approximately 5 minutes or until you have a smooth elastic dough (scrape the hook halfway through kneading).
MIXING BY HAND
- Add the olive oil, flour and salt, then with a fork mix until the dough starts to come together. On a lightly floured surface remove dough from the bowl and knead until dough is smooth and elastic approximately 10 minutes (if dough is really sticky add a little extra flour).
- Place in a lightly oiled bowl and cover with plastic wrap and a large clean kitchen towel, leave in a warm draft- free place until doubled in bulk, approximately 2 hours.**
- Pre heat oven to 250° celsius. Punch dough down a few times and divide into 3 balls, let dough rest for 20 minutes.
- Place dough in desired pizza or cookie sheets (lightly oiled) and fit dough into desired shapes (using your clean hands).
- Top with your favourite toppings (without the cheese), bake for approximately 15-20 minutes (until crust is golden) and then top with grated mozzarella cheese and bake for three more minutes or until cheese is melted. Enjoy!
- **At this point, dough can also be refrigerated, place in plastic bag, remove air and tie securely up to 24 hours.
Notes
If using instant yeast instead of active dry use 2 1/4 teaspoons of instant yeast. In the bowl of the mixer add the flour, yeast and sugar and combine, then add the water and oil, start to mix with the dough hook and add the salt, continue to knead for about 8-10 and continue with the recipe.
If you have a fan-assisted oven, then you can lower the oven temperature by 20 degrees C.

If you want your oven to last for years to come, it’s important to take care and maintain the oven – including all of its components. In this article, we’re sharing a few oven maintenance tips to help you take care of your own.
Clean Your Oven Regularly
Experts say that you should give your oven a thorough cleaning at least twice each year. Of course, if you use it daily, you may want to increase that cleaning routine to, say, every couple of months. Leaving burnt food to continue to re-burn with every use will eventually cause your oven to work less efficiently. Not to mention that the continuous smell of burnt food every time you use it will eventually start affecting the taste of your new meal.
Don’t Remove Your Oven’s Knobs
These knobs are directly connected to your oven’s control system. When you remove them to spray cleaner on them, you are actually putting yourself at risk of electrocution. As tempting as it is to clean them this way, don’t. Leave your knobs right where they are.
Inspect and Replace Your Gas Line
Every time you purchase a new oven, you should always update your gas line, too. It seems like a logical thing to do, right? After all, a fresh line means less chance of a leak down the road. But, here’s the thing – what if you have invested in a well-working oven and you don’t plan on upgrading anytime soon? If you have had your oven for a while, you may want to take the time to inspect the line. If it looks at all worn, replace it.
