Ingredients
Finely grated zest of 1 medium lime
2 tablespoons freshly squeezed lime juice
1/2 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1 medium pineapple cut into cubes
2 large English cucumbers cut into cubes
1/2 small red onion, thinly sliced
1/2 cup coarsely chopped fresh cilantro leaves
Instructions
Combine the zest, lime juice, salt, chili powder and cayenne together and whisk. Add the rest of the ingredients and toss. Cover and refrigerate for 20 minutes to allow the flavours to melt together. Enjoy with your next chicken braai!
